This 3-ingredients sweetened condensed milk is one of the best recipes with a regular and healthier version to prepare at home in no time.

Did you ever try to make condensed milk at home? For someone obsessed with Food DIY, I find it strange that it took me some time to realize that I have not yet made it at home especially since it is considered one of the quick easy recipes. Hence, I decided to draw peace with myself and started making my 3 ingredients condensed milk recipe.

Although I use it in many of my dessert recipes, the sweetened condensed milk is one of the best ingredients to add to many dessert recipes. The list is so long. To name a few: ice cream cake, coconut balls, bounty chocolate, lazy cake, and so on. Try adding it to your latte and notice the hype in the taste if you are open to a sweetened latte.

What is sweetened condensed milk?

Condensed milk is milk with added sugar put to boil until it loses half of its water amount as it evaporates. For the best results, a small amount of baking soda is added to thicken the texture of the milk.

How to make this recipe of 3 ingredients condensed milk?

To make this recipe, bring first sugar and milk into a saucepan over low to medium heat. Once the sugar is dissolved, the milk will start changing in color and texture. Simmer until the milk becomes well heated. At this stage, add the soda bicarbonate and let the milk simmer until it loses half of its volume. By that time, the color and texture of the milk will change to creamy.

The regular and the light versions

Although the perception that condensed milk is high in calories dominates, that statement does not mean that you cannot have a light version.

Milk: For the regular version you can opt for full-fat milk. Substitute your full-fat milk with 0 fat milk, lactose-free milk, or even go vegan with almond milk, coconut milk, or soy milk.

Sugar: Condensed milk is sweetened. However, you can substitute the white sugar with brown sugar that caramelizes perfectly. Otherwise, you can opt for honey, maple syrup, or molasses. What you need to consider is to use a caramelized substitute.

Baking soda: For the perfect creamy silky texture, this is the hero ingredient.

How long does it last?

Homemade condensed milk stays for a week in the fridge if kept in an air-tight container. Though I do not advise freezing it, you can keep it in the freezer for up to 3 months.

Condensed milk makes a great addition to sweets and desserts. If you have a sweet tooth, here are a few recipes for you:

Ingredients

  • 2 cups milk
  • Half cup sugar
  • ¼ tsp baking soda

 

Instructions

  1. Bring the milk and sugar to a boil
  2. Boil on a low to medium flame. Otherwise, keep stirring if you are boiling the milk on a high flame.
  3. The color of the milk will start to become yellow due to the sugar.
  4. Once you start seeing bulbs on the sides, add the baking soda
  5. The milk will thicken due to the baking soda.
  6. Simmer until you get the creamy texture and color

 

Notes

  • Do not over simmer the milk as it will thicken more once it cools.
  • If you decide the use frozen condensed milk, transfer it to the fridge overnight. Then whisk it until you regain its creamy consistent texture.
  • Do not use a regular sweetener such as stevia to substitute sugar. These sweeteners do not caramelize.
