Here is a simple crepes recipe that will give you the privilege of making delicious classic French crepes with no fail.

Did you try making crepes before? I was personally hesitant about making crepes at home until my mom convinced me. I thought that making them at home is a complicated task, but following my mom’s recipe made me change my mind. And guess what, making crepes is much easier than you think!

Although the task of preparing crepes may be complicated, here is a simple crepes recipe that will give you the privilege of making delicious classic French crepes with no fail. In a few minutes over medium heat, your dough will turn into thin, delicate homemade crepes. And when your household members will try them, you will notice that you have come up with one of the best healthy dinner ideas.

If you have a blender or a stand mixer in hand, then make sure to use it to have a smooth batter with no lumps and with the right thickness. The less thick the batter is, the better. If you are not using a “crepière” to make this simple crepes recipe, then you can definitely use a non-stick pan.

Are crepes pancakes?

Although crepes are defined as French-style pancakes, crepes and pancakes are different. When making pancakes, you need to add baking powder as a leavening which makes pancakes thick. While you do not need any leavening to make crepes. Hence, crepes remain very thin and flat.

What is this simple crepe recipe made of?

To prepare the crepes batter, you need:

  •     Unsalted butter: melted butter in specific. It is a basic ingredient for buttery delicate crepes.
  •     All-purpose flour: a key ingredient in this recipe
  •     Granulated sugar: it is up to you if you want to go for white or brown sugar
  •     Salt: just a pinch to boost the flavor.
  •     Whole milk: instead of water. Milk will add a heavy flavor to your crepes.
  •     Eggs: they are a must and they are there to enhance the whole texture of the crepes.

How is this simple crepes recipe made?

To make this simple crepes recipe, first, make sure to melt the butter and let it cool down before using. Next, whisk the eggs and milk, and add sugar, salt and flour. It is better to use a blender as it works perfectly in mixing the ingredients and avoiding any lumps.

Now chill the batter for a good half to one hour. Do not skip this step.

Then, cook the crepes: The less the batter poured and the larger you stretch the crepe, the thinner your crepe will be.

Finally, add your filling, & topping, and serve!

Do you flip crepes?

Not necessarily. I personally cook the crepes on medium heat so that they do not burn or turn out crispy. As they get cooked on medium heat, the top of the crepes dries. Hence you can easily add the filling and fold your crepe.

Why does the crepe batter need to rest?

That is because the gluten will relax when you put the batter to rest. This is the secret to ending up with thin, delicate, and successful simple crepes.

Why you may get crispy crepes?

If the heat is high, then you will end up with crispy non-delicate crepes. Work on medium heat to get the perfect crepes.

Sweet or savory crepes? 

This batter uses a minimum amount of sugar, which makes these simple crepes perfect to have with sweet or savory fillings and toppings.

Simple crepes recipe with strawberry, chocolate and nuts

Here is a simple crepes recipe that will give you the privilege of making delicious classic French crepes with no fail.

Ingredients

  • ½ liter milk
  • 2 eggs
  • 250 g flour
  • 50 g melted butter
  • 50 g sugar
  • 1/2 tsp vanilla
  • A pinch of salt

 

Instructions

  1. Melt the butter and let it cool
  2. Add eggs, milk, and butter and blend.
  3. Add vanilla, sugar salt, and flour and process to mix all ingredients for 10 seconds.
  4. Cover the batter and let it chill for 1 hour.
  5. Heat a 20 cm non-stick pan over medium heat.
  6. Brush the pan with butter.
  7. Stir the batter before using it to mix well all layers.
  8. Pour 4 to 5 tbsps. of the batter, then swirl the pan immediately to cover evenly the whole pan.
  9. Cook until the bottom becomes golden brown.
  10. Transfer to a wire rack to cool down.
  11. Add your preferred filling and toppings and serve.

 

Notes

  • Chill the batter. This step is very important as it will allow the flavors to work together, for the gluten to relax and for the flour to hydrate.
  • Butter the pan between each 2 to 3 crepes. Make sure to coat the pan well before adding more batter.
  • Twirl the pan immediately after pouring in the batter. Make sure to pour the batter at the center of the pan. The batter will then stretch as much as possible.
