Making this recipe of homemade chicken mortadella is a simple exercise. With chicken, a food processor, some ice, and seasoning, you are ready.

Chicken mortadella anyone? When people say Mortadella, they may be probably referring to the delicious sausages of Bologna in Italy! There, mortadella is a cured pork meat specialty that Italians enjoy. But hey! Do you know you can make mortadella with beef meat, goat meat, and chicken meat? Making homemade chicken mortadella is a simple exercise. With chicken, equipment at hand such as a food processor, and some ice, you are set to go!

Do we cook chicken mortadella?

The answer is yes. you need to steam cook it at 78°C. Therefore, we use the technique of the bain-marie to steam it for 30 minutes. Following the steam process, you need to transfer the mortadella to cool down before it goes to the fridge to chill for a couple of hours.

How to make it?

To prepare the chicken for the mortadella, first, we need to cut it into cubes and add these cubes to a grinder with small ice cubes. Then, we need to use the grinder to make a smooth paste of chicken.

Once the chicken paste is ready, we need to transfer it into a new bowl and add the seasonings and remaining ingredients.

Once we mix the chicken paste and ingredients, we need first to spread the paste on an aluminum foil. Then we need to shape the mortadella into a roll using our hands and then roll and cover the mortadella with the foil.

Second, we need to steam cook the mortadella for 30 minutes.

Once the mortadella cools, we need to transfer it to the fridge to chill.

How can we offer it?

Usually, chicken mortadella is prepared plain or with additional ingredients. While some people prefer that it includes olives, some others prefer to have it with pistachio, red pepper, or mushrooms.

On another note, this mortadella can be added to pizza meals or sandwiches with mustard, mayonnaise, ketchup, and vegetables. Moreover, it can be served along with cheese as one of the cold cuts over a dinner.

Is chicken mortadella healthy?

As mentioned above, this mortadella includes chicken breast, which is the healthiest part of chicks. It is rich in protein, vitamins, and amino acids.

It is rich in the B complex vitamins (B1, B2, B3, and B6) which support the nervous system and mood, the metabolism, and the skin. In addition, as it is rich in iron, it supports the muscles and protects the body from the risk of fatigue and anemia.

Moreover, with zero amounts of starch and fats, and a wealth of protein, the chicken mortadella is an added-value component to a heart-healthy diet.

Homemade chicken mortadella

Making this recipe of homemade chicken mortadella is a simple exercise. With chicken, a food processor, some ice and seasoning, you are ready!

Ingredients

  • 250g boneless chicken breast cut into large cubes
  • 1 tsp sweet pepper or paprika
  • 1/2 tsp Salt
  • 1 tsp olive oil
  • 1 ice cube

 

Optional ingredients:

  • 10 g diced mushrooms
  • 10 g diced red pepper
  • 10 g green olives
  • ½ tsp chili flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder

 

Instructions

  1. Cut the chicken breast into large cubes and transfer the chicken cubes to a grinder
  2. Add the ice cube and turn the grinder on until you have a fine paste of chicken
  3. Transfer the chicken paste into a bowl and add the main ingredients. Add the optional ingredients of your choice.
  4. Mix all ingredients using a spatula.
  5. Line an aluminum foil sheet over a tray, then transfer the mortadella to one edge of the foil.
  6. Grease your hands with oil and press on the mortadella to make a roll.
  7. Roll then the aluminum foil around the mortadella and ensure to close it from all sides.
  8. Using the bain-marie technique, fill in a pan with water, then place a rack or stand over the pan and place the mortadella on it.
  9. Steam for mortadella for half an hour on medium flame then remove it and let it cool on a cooling rack.
  10. Transfer it to the refrigerator, covered with the foil, to chill for 4 hours,
  11. Cut the chicken mortadella into thin slices and serve it upon your preference.

 

Notes

  • Minced chicken is different than the chicken paste that you get from chicken breast. Therefore, avoid using minced chicken.
  • Do not remove the foil until the mortadella is well chilled in the fridge
  • You can keep the mortadella in the fridge for a week and in the freezer for a month.
