Refresh your mood with my quick easy ice cream cake recipe. Prepare this easy and super delicious cake in just 15 minutes with a few steps.

Back when I was in Lebanon, this 15 minutes ice cream cake aka gateau glacé dessert was the staple when we are gathering on a hot afternoon, or expecting guests in summer. Although we used to do it with store-bought ingredients, this cake was super delicious everyone craved and most importantly, one of the quick easy recipes to make. As I developed my OCD towards doing everything myself, I started preparing the condensed milk at home. I was quite happy about it. because I was finally able to adjust the sugar rush in the cake. Hence, I could enjoy this cake while somehow minding the calories.

I am still working on the cream recipe so that I turn this cake into a fully homemade cake from preparation to cooking. Therefore, I promise to upload the recipe of the cream as soon as I am satisfied with the results.

Now, let’s go back to our ice cream cake recipe. This cake is not the usual ice cream cake that you buy from the store. So if you expecting to see layers of fudge cake and ice cream, then please accept my apology. This is more of a “Gateau Glacé” version with layers of biscuits replacing the fudge sponge. However, I promise you a simple, easy, and super delicious ice cream cake in just 15 minutes that you will do times and times as soon as you try the first bite.

What ingredients do I need to prepare this cake?

  • Condensed milk: Made simply with milk, sugar, and a pinch of baking soda. I use this homemade version to lower the sugar intake and any additional preservatives that the store-bought version may include
  • Cream: known as ashta. This is not however the same heavy “ashta” that we use in Arabic sweets. Luckily it is much lighter.
  • Biscuit: Any biscuit without cream would work.
  • Whipped cream: You need powder cream to add to the batter.
  • Cacao: we need to add the cacao to half of the batter to make a chocolate flavored layer. However, we will use cacao as well to flavor the biscuit.

What other flavors can I add?

The beauty and simplicity of this healthy food recipe make it easy for you to add any flavor you want.

For example, you can improvise by making three layers of this cake, with vanilla, caramel, and chocolate flavors. All you need is to add two spoons of caramel to the original batter and whisk to get the caramel batter.

In addition, you can replace the cacao with melted chocolate to strengthen the chocolate flavor and use darker chocolate.

On the other hand, making fruity cake is also simple. Try to blend some frozen strawberries and add them to the batter, or simply add lemon juice, lemon zest, and lemon essence to the batter. As a result, you will have a lemon-flavored cake.

How to prepare this 15 minutes ice cream cake?

As mentioned earlier, this dessert is a go-to staple you can easily consider it one of the quick easy recipes to prepare at home. Not only because of its flavor but because of how easy it is to prepare as well.

First, you need to combine the cream, condensed milk, and whipped cream in a stand mixer bowl and whisk for 10 minutes.

In the meantime, you need to dip the biscuit in water mixed with cacao and make the first layer of biscuits in the tray.

Secondly, you will need to divide the batter into two equal amounts, add some cacao to one of the batters and mix until fully combined.

Then, spread the chocolate batter over the biscuits in the tray, make a second biscuit layer, and spread the white batter.

Finally, drizzle some cacao on top of the cake, cover, and freeze for 8 hours.

This 15 minutes ice cream cake recipe is very easy to prepare and super delicious. You will do times and times as soon as you try the first bite.

Ingredients

  • 1 cup condensed milk
  • 340 g cream in cans – ashta
  • 2 whipped cream pouches – 72 g
  • 3 tbsp cacao – divided 2 & 1
  • 1 cup of water
  • 1 pack shortbread biscuit

 

Instructions

  • Dissolve 1 tbsp of cacao in the water
  • Dip the biscuit in the water, drain and lay in the tray
  • Repeat to cover the bottom of the tray
  • In a stand mixer bowl, combine the condensed milk, cream, and whipped cream powder
  • Whisk for 10 minutes
  • Transfer half of the batter amount to another bowl.
  • Add 2 tbsp cacao to the remaining batter and whisk to combine
  • Spread the cacao flavored batter over the biscuits in the tray
  • Spread a new layer of biscuit using the same process
  • Cover the second layer of biscuits with the white batter
  • Using a small strainer, drizzle some cacao on top of the cake
  • Cover the cake with plastic wrap or cling film
  • Freeze up to 8 hours before serving

 

Notes

  • To prepare the condensed milk, check this video
  • You can use a lesser amount of sugar.
  • To make the batter thicker, you can use one additional can of cream, 170g.
