For me, a delicious cake was always a sign of eggy, buttery, milky to moist cakes, but I was wrong. Actually, I was very wrong. If you try this vegan cake recipe, you will rank it on the list of the best healthy recipes for cakes that you have tried.

What is a vegan cake made of?

As I mentioned before, preparing this vegan cake at home does not require unusual ingredients or substitutes.

Here is what you need:

  • Flour: all purpose-flour will work
  • Oil: preferable vegetable oil as olive oil is intense in flavor.
  • Sugar: because a cake falls under the desserts list.
  • Vanilla: essential in any cake recipe.
  • Baking powder and baking soda: to serve as the leavening of this cake.
  • Cacao: because we are preparing a vegan chocolate cake but you can omit cacao if you do not want a chocolate cake.
  • Warm water: Since we are avoiding the use of dairy products.
  • Vinegar: simply white vinegar.

How to make a vegan cake?

Do you know that making this vegan cake recipe does not require any stand or electric mixer?

To make this cake at home, start by mixing all sugar, oil, and vinegar. Then add the baking powder and baking soda. You will notice a foamy batter forming. Add the hot water then the cocoa, salt, and flour.

Then, mix all ingredients and transfer the batter to a cake mold greased with Tahini or vegetarian butter. Bake it at 180°C for 35 minutes.

Is this cake gluten-free?

No, it is not. However, if you want to have a gluten-free cake, then simply swap the all-purpose flour with gluten-free flour.

Definitely! Instead of transferring the batter into a cake mold, you can spoon it into cupcake molds instead. Ake sure to grease the cupcake mold before. It is also important to note that the baking time should be shorter, say between 15 to 20 minutes.

Is vegan cake healthy?

Since this cake is egg-free and butter-free then it is counted healthier than regular cakes.

How do you make a moist vegan chocolate cake?

Simply add apple sauce to the batter.

The best vegan cake ever!

This easy vegan cake is made with simple ingredients. It does not involve unusual ingredients and is whipped in no time.

Ingredients

  • 2 cups flour
  • 1.5 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 tsp. cacao
  • ½ cup oil
  • 1.25 cup warm water
  • 1 tbsp white vinegar

 

Ganache sauce:

  • 1/2 cup of water
  • 2 tbsps. sugar
  • 1 tbsp cocoa powder
  • 1 tbsp flour
  • ¼ cup vegetable oil

 

Instructions

  1. Preheat the oven to 180°C.
  2. Grease your cake mold with tahini or vegetarian butter. 
  3. In a bowl, mix sugar, oil, vanilla extract, and vinegar.
  4. Add baking powder and baking soda and mix.
  5. Add water and mix all ingredients.
  6. Pour in cocoa powder, salt, and flour.
  7. Mix all ingredients scraping from down up until the dry ingredients are dissolved. 
  8. Transfer the batter to the cake mold.
  9. Bake the cake for 35 minutes at 180°C.
  10. Transfer the cake to a cooling rack to cool completely before serving.

 

To prepare the ganache sauce:

  1. Over medium heat, in a pan, pour the water, sugar, and cocoa and mix until fully combined.
  2. Start adding the flour slowly over the sauce while stirring well to combine and avoid any lumps.
  3. Heat the sauce until it thickens then set aside to cool down.
  4. Pour in the oil and mix to combine. You can use a blender for the best results.

 

Notes

  • Keep the cake in the mold until it cools completely.
  • If you want to bake cupcakes in paper cups, make sure to grease them or spray them with oil before pouring them into the batter.
  • To have a completely vegan cake, grease the mold with vegetable butter or tahini.
